I don't know of any versions other than the spoken word version from Superman: The Movie, which is my preferred. I know there are tracks recorded that are actually "sung", but I've never listened to them.

They were originally going to have Margot Kidder sing it, but when they heard how horrible her singing voice was, they decided against it. ;D
I would've preferred it sung by another woman, personally.

The song version is by Maureen McGovern.
I remember hearing in an interview that it wasn't because MK's singing was bad. It was just that they thought the scene worked better when the lyrics were spoken instead of sung.

I always thought that scene was weird. I couldn't understand why she was reciting a poem.

I don't listen to a lot of music, but there is this one song that kinda reminds me of Wall-E, it's from the movie Enchanted and is entitled 'That's how you know'. I think it's kinda appropriate for some scenes.

I mean, it seems kinda like it should have been sung during that scene aboard the Axiom. no i cant take credit for the video Hol om mig! I love that song! (and that vid, even though I haven't seen much Princess Tutu). I'm not sure how well it fits Wall-E and Eve, reading the translation. But it's a wonderful song nonetheless. I have a couple more songs I think fit Wall-E and Eve. Something by the Beatles It's such a quiet, graceful song. It fits well with Wall-E's love for Eve.
