It's occured to me that I haven't really found any Pixar easter eggs in this movie, aside from A113 (don't remember seeing it, but I can guarantee it's in there somewhere)
Does anyone know of any?

Not really, unless you count the casting of John Ratzenberger as an Easter egg.

Okay, checked IMBD and found one so far:
During a street scene, there is a mime in the background, who is the character Bomb Voyage" from The Incredibles (2004)
And another...
When deciding where Remy should control Linguini, Linguini pulls open his trousers exposing his underwear, where one can make out an The Incredibles (2004) logo pattern on his boxers.
More...:
Nearly every Pixar film shows the Pizza Planet Truck from Toy Story (1995). The truck appears on the bridge over the Seine on the scene where Skinner chases Remy.
I guess, in this movie, it's a lot tougher than any other Pixar film to catch the inside jokes

There's an Up Easter Egg in there, as the shadow of the dog that's supposed to appear in Up shows up at one point (Pixar confirmed).

WHOA! I've watched Ratatouille 1,000 times and never saw any Easter Eggs in the film. It just goes to show you people are tricky like that. In South Park they use aliens as Easter Eggs, even in their 1999 Motion Picture production South Park: Bigger, Longer, & Uncut.

I dunno if this counts, but WALL-E appears in the DVD short "Your Friend The Rat".

Thanks for pointing that out to me!
Hehe...I sort of...freaked out when I read that and had to go check it out ASAP. I rocketed from the computer chair, went on a mad DVD hunt and popped it in. Sure enough, Cartoon Wall-E was in it. He was so cute!
BTW, I Wikipedia-ed "A113" and found that A113's cameo in Ratatouille was found on Git, the lab rat, who has a tag on his left ear that reads, "A113". (quoted almost directly from the Wikipedia article)
